Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 tablespoons coconut sugar or granulated sugar
  • 1.5 teaspoons baking soda
  • 0.75 teaspoon baking powder
  • 0.75 teaspoon salt
  • 2 large eggs at room temperature
  • 1.75 cups almond milk or skim milk
  • 1 cup low-fat Greek yogurt
  • 2 teaspoons pure vanilla extract
  • 0.75 cup sprinkles
  • as needed Maple syrup and/or fresh whipped cream for serving

Instructions

  • In a large mixing bowl, combine the whole wheat flour, all-purpose flour, coconut sugar, baking soda, baking powder, and salt. Whisk these ingredients together until they are evenly distributed.
  • In another bowl, whisk together the eggs, almond milk (or skim milk), Greek yogurt, and vanilla extract until smooth and well combined.
  • Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  • Fold in the sprinkles, ensuring they are evenly distributed throughout the batter.
  • Preheat your griddle or non-stick skillet over medium heat. Lightly grease it with a bit of oil or cooking spray.
  • Pour about 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, around 2-3 minutes. Flip and cook for an additional 2-3 minutes until golden brown.
