Ingredients

  • 8 oz rice noodles
  • 2-3 green onions sliced
  • 2 tsp sesame seeds
  • 3 Tbsp hoisin sauce gluten-free if desired
  • 1 Tbsp creamy natural peanut butter
  • 1 Tbsp unseasoned rice vinegar
  • 1 tsp pure maple syrup
  • 1 clove garlic minced
  • 1/2 tsp freshly grated ginger
  • 1-2 Tbsp water or vegetable broth optional, as needed
  • Roasted peanuts, cashews, red pepper flakes, fresh cilantro, sesame seeds for garnish

Instructions

  • Begin by bringing a large pot of water to a boil. Add the rice noodles and cook according to the package instructions, usually around 4-5 minutes until al dente. Once cooked, drain the noodles and set them aside.
  • In a mixing bowl, combine the hoisin sauce, peanut butter, rice vinegar, maple syrup, minced garlic, and freshly grated ginger. Whisk together until smooth. If the sauce is too thick, add 1-2 tablespoons of water or vegetable broth to reach your desired consistency.
  • In a large mixing bowl, toss the cooked rice noodles with the prepared sauce. Make sure all the noodles are well coated in the delicious mixture.
  • Fold in the sliced green onions and any additional toppings you desire, such as roasted peanuts, cashews, or fresh cilantro. This adds a delightful crunch and freshness to the dish.
  • Transfer the noodles to serving bowls and sprinkle with sesame seeds, red pepper flakes for a kick, and any other garnishes you enjoy. Serve immediately and dig in!
