Ingredients

For the Filling:

  • 1 can jackfruit (20-ounce), cored and shredded
  • 1 teaspoon extra-virgin olive oil
  • 2 cloves garlic (grated)
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 pinch cayenne pepper
  • ½ teaspoon sea salt
  • Freshly ground black pepper (to taste)
  • 1 can diced green chiles (4-ounce, drained)
  • 12 to 14 pieces flour or flour+corn tortillas
  • ½ cup refried beans
  • ½ cup jack cheese
  • ½ cup chopped scallions
  • Extra-virgin olive oil cooking spray
  • Toppings (Guacamole, Pico de Gallo, cilantro, serranos)

Instructions

Homemade Taquitos Instructions:

  • In a large skillet, heat the olive oil over medium heat. Add the grated garlic and sauté for about 30 seconds until fragrant. Then, add the shredded jackfruit, cumin, coriander, cayenne pepper, sea salt, and freshly ground black pepper. Cook for about 5-7 minutes, stirring occasionally, until the jackfruit is heated through and slightly caramelized.
  • Once the jackfruit mixture is cooked, stir in the drained diced green chiles. Remove the skillet from heat and allow the mixture to cool slightly before moving on to the next step.
  • Preheat your oven to 400°F (200°C). Take a tortilla and spread a thin layer of refried beans down the center. Add a spoonful of the jackfruit mixture, a sprinkle of jack cheese, and a few chopped scallions. Roll the tortilla tightly around the filling and place it seam-side down on a baking sheet. Repeat this process with the remaining tortillas and filling.
  • Lightly spray the taquitos with extra-virgin olive oil cooking spray to ensure they get nice and crispy. Bake in the preheated oven for about 20-25 minutes or until golden brown and crispy, flipping them halfway through for even cooking.
  • Once out of the oven, let the taquitos cool for a few minutes before serving. Pair them with your favorite toppings like guacamole, pico de gallo, fresh cilantro, and sliced serranos for an extra kick!
