Ingredients

Tart Crust

  • 1 cup All-purpose flour
  • 1/4 cup Powdered sugar
  • 1/2 cup Unsalted butter softened
  • 1/2 teaspoon Vanilla extract

White Chocolate Mousse Filling

  • 1/2 cup White chocolate chopped
  • 1/2 cup Heavy cream
  • 1/4 cup Granulated sugar
  • 1 teaspoon Gelatin powder
  • 2 tablespoons Cold water

  • Fresh berries strawberries, raspberries, blueberries, or blackberries

Instructions

Make the Tart Crust

  • Combine 1 cup of all-purpose flour and 1/4 cup powdered sugar in a mixing bowl. Add 1/2 cup softened unsalted butter and 1/2 teaspoon vanilla extract. Blend together until crumbly dough forms. Press dough evenly into tartlet pans or muffin tins and chill for at least 30 minutes.

Bake the Tart Crust

  • Preheat oven to 350°F (175°C). Bake chilled tart shells for 12-15 minutes until light golden brown. Remove and let cool completely.

Bloom the Gelatin

  • Sprinkle 1 teaspoon gelatin powder over 2 tablespoons cold water. Let sit 5 minutes to bloom, then warm gently until dissolved. Set aside.

Melt the White Chocolate

  • Melt 1/2 cup chopped white chocolate gently over double boiler or microwave, stirring until smooth. Let cool slightly but not harden.

Prepare the Mousse

  • Whip 1/2 cup heavy cream with 1/4 cup granulated sugar until soft peaks form. Fold melted white chocolate and dissolved gelatin into whipped cream gently.

Assemble the Tartlets

  • Fill cooled tart shells with white chocolate mousse, smoothing tops. Cover with plastic wrap and refrigerate at least 2 hours until set.

Garnish and Serve

  • Top each tartlet with fresh berries just before serving. Enjoy chilled for creamy texture and fresh contrast.
