Ingredients

For the Cupcakes:

  • 1.5 cups white whole-wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 3 tablespoons honey
  • 0.5 teaspoon vanilla extract
  • 1 large egg
  • 0.5 cup plain Greek yogurt
  • 2.5 tablespoons olive oil (can also use canola oil)
  • 0.5 cup almond milk
  • 1 tablespoon orange juice
  • 0.5 cup apples (finely diced)

For the Vanilla Frosting:

  • 0.5 cup reduced-fat cream cheese (softened)
  • 2 tablespoons raw honey (I recommend Honest Raw Honey)
  • 1 teaspoon pure vanilla extract

  • Step 1: Preheat your oven to 350°F (175°C). This ensures that your cupcakes bake evenly.
  • Step 2: Line a cupcake pan with cupcake liners to prevent sticking and make cleanup easier.
  • Step 3: In a medium bowl, whisk together 1 1/2 cups of white whole-wheat flour, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda. Set aside.
  • Step 4: In a large mixing bowl, combine 3 tablespoons of honey, 1/2 teaspoon of vanilla extract, and 1 large egg. Whisk until well combined. Then, add 1/2 cup of plain Greek yogurt, 2 1/2 tablespoons of olive oil, 1/2 cup of almond milk, and 1 tablespoon of orange juice. Mix until smooth.
  • Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
  • Step 6: Gently fold in 1/2 cup of finely diced apples until evenly distributed throughout the batter.
  • Step 7: Spoon the batter into the prepared cupcake liners, filling each about 2/3 full to allow for rising.
  • Step 8: Place the cupcake pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 9: Once baked, remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  • Step 10: In a medium bowl, beat together 1/2 cup of softened reduced-fat cream cheese, 2 tablespoons of raw honey, and 1 teaspoon of pure vanilla extract until smooth and creamy.
  • Step 11: Once the cupcakes are completely cool, use a knife or piping bag to frost each cupcake with the delicious vanilla frosting.
