Ingredients

  • 1.5 lbs chicken drumsticks
  • 1 piece lemongrass top part trimmed off
  • 4 cloves garlic peeled and chopped
  • 1.5 tablespoons soy sauce
  • 0.5 tablespoon oyster sauce or fish sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 3 dashes white pepper
  • 1 pinch salt

  • Step 1: Prepare the Marinade - In a mixing bowl, combine the chopped garlic, soy sauce, oyster sauce (or fish sauce), honey, sesame oil, white pepper, and salt. Whisk these ingredients together until well blended.
  • Step 2: Prepare the Lemongrass - Trim off the top part and use the bottom part, which is the tender part. Smash it slightly with the back of your knife to release its flavors, then chop it into smaller pieces.
  • Step 3: Marinate the Chicken - Add the chicken drumsticks to the bowl of marinade, ensuring they are fully coated. Toss in the chopped lemongrass as well. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum flavor.
  • Step 4: Preheat the Oven - Preheat your oven to 400°F (200°C).
  • Step 5: Arrange the Chicken - Once marinated, remove the chicken from the refrigerator and arrange the drumsticks on a baking sheet lined with parchment paper.
  • Step 6: Bake - Place the baking sheet in the preheated oven and bake for 35-40 minutes, or until the chicken is golden brown and a meat thermometer reads 165°F (74°C).
  • Step 7: Serve and Enjoy - Once cooked, remove the chicken from the oven and let it rest for a few minutes. Serve with your choice of sides.
