Ingredients

For the Brownies:

  • 1/2 cup unsalted butter
  • 6 ounces baking dark chocolate
  • 1 1/4 cup white granulated sugar
  • 1 cup all-purpose flour
  • 2 large eggs

For the Mint Frosting:

  • 2 1/2 cups powdered sugar or more
  • 4 ounces cream cheese softened to room temperature
  • 4 tablespoons unsalted butter softened to room temperature
  • 1/2 teaspoon peppermint extract
  • Gel mint green food coloring a few drops
  • 2 ounces dark baking chocolate melted

Directions:

  • Step 1: Preheat the Oven. Start by preheating your oven to 350°F (175°C). This ensures that your brownies will bake evenly.
  • Step 2: Prepare the Baking Pan. Line an 8x8 inch baking pan with parchment paper, allowing some overhang on the sides for easy removal later. Lightly grease the parchment paper.
  • Step 3: Melt the Chocolate and Butter. In a double boiler or microwave-safe bowl, melt the 6 ounces of baking dark chocolate and 1/2 cup of unsalted butter together. Stir until smooth and well combined.
  • Step 4: Mix the Brownie Batter. In a mixing bowl, combine the melted chocolate mixture with 1 1/4 cups of white granulated sugar. Whisk in the 2 large eggs one at a time until fully incorporated. Slowly add in 1 cup of all-purpose flour and mix until just combined. Do not overmix!
  • Step 5: Bake the Brownies. Pour the brownie batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let them cool completely in the pan.
  • Step 6: Prepare the Mint Frosting. In a separate mixing bowl, beat together the 4 ounces of softened cream cheese and 4 tablespoons of softened unsalted butter until smooth. Gradually add in the 2 1/2 cups of powdered sugar, mixing well. Add 1/2 teaspoon of peppermint extract and a few drops of gel mint green food coloring until you achieve your desired color.
  • Step 7: Frost the Brownies. Once the brownies have cooled, spread the mint frosting evenly over the top.
  • Step 8: Drizzle with Chocolate. Melt the 2 ounces of dark baking chocolate and use a fork to drizzle it over the frosted brownies for that extra touch of elegance.
  • Step 9: Chill and Cut. Chill the brownies in the refrigerator for at least 30 minutes to set the frosting. Once set, lift the brownies out of the pan using the parchment paper and cut into squares.
