  • 1 sheet puff pastry
  • 4 tbsp mixed berry jam choose your favorite brand or make your own
  • Melted butter for brushing
  • Coarse sugar for topping

  • Preheat your oven to 400°F (200°C).
  • Line your baking sheet with parchment paper.
  • If your puff pastry is not pre-rolled, roll it out to about 1/8 inch thick and cut into four 4-inch squares.
  • Place a tablespoon of mixed berry jam in the center of each square, leaving space around the edges.
  • Fold the corners over the jam to form a triangle or rectangle and pinch edges to seal.
  • Brush melted butter over the tops of each pastry.
  • Sprinkle coarse sugar over the tops.
  • Bake for 15-20 minutes or until puffed and golden brown.
  • Let cool slightly on a wire rack before serving.
