Ingredients

For the Dish:

  • 500 g lamb leg or beef, cut into bite-sized pieces
  • 1/2 piece beef bone with marrow
  • 400 g basmati rice
  • 360 g green beans, trimmed and cut into 1-inch pieces
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 tbsp tomato paste
  • 6 tbsp vegetable oil
  • 1 stick cinnamon stick
  • 1 to 2 tsp cinnamon powder
  • 1/2 tsp saffron threads
  • 2 ice cubes (to bloom the saffron)
  • 2 tsp turmeric
  • 1/2 tsp black pepper
  • 2 tbsp salt, to taste

  • Step 1: Prepare the Saffron - Start by blooming the saffron. Place the saffron threads in a small bowl and add the ice cubes. Let it sit for about 15 minutes until the saffron releases its color and aroma.
  • Step 2: Cook the Meat - In a heavy-bottomed skillet, heat 4 tablespoons of vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Stir in the minced garlic and cook for another minute. Add the lamb or beef pieces, browning them on all sides.
  • Step 3: Flavor the Base - Once the meat is browned, add the tomato paste, turmeric, cinnamon stick, cinnamon powder, black pepper, and salt. Stir well to coat the meat with the spices. Add the beef bone with marrow to the pot, and pour in enough water to cover the ingredients. Bring to a boil, then reduce the heat to low and let it simmer for about 1 to 1.5 hours, or until the meat is tender.
  • Step 4: Prepare the Green Beans - While the meat is cooking, prepare the green beans. In a separate pot, bring water to a boil and add the trimmed green beans. Blanch them for about 5 minutes, then strain and set aside.
  • Step 5: Cook the Rice - Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch. In a large pot, bring water to a boil and add the rinsed rice along with 1 tablespoon of salt. Parboil the rice for about 5-7 minutes, or until the grains are slightly soft but still firm. Drain the rice into a strainer and set aside.
  • Step 6: Layer the Dish - Once the meat is tender, remove the beef bone and stir in the blanched green beans. Add the parboiled rice on top of the meat and beans. Drizzle the saffron-infused ice water over the rice, ensuring even distribution. Cover the pot with a tight-fitting lid, reduce the heat to low, and let it steam for about 30-40 minutes. This allows the flavors to meld and the rice to finish cooking.
  • Step 7: Serve - Once the rice is fluffy and cooked through, carefully fluff it with a fork. Serve the Loobia Polo hot, garnished with additional cinnamon powder or fresh herbs if desired. Enjoy your delightful meal with a side of yogurt or a fresh salad.
