Preheat your oven to 400°F (200°C). Slice the eggplant into 1/4 inch thick rounds.
Sprinkle salt generously over both sides of the eggplant slices. Let sit for about 15-20 minutes, then rinse and pat dry.
In a mixing bowl, combine the minced garlic, olive oil, and Italian seasoning. Brush this mixture onto both sides of each eggplant slice.
Place the seasoned eggplant slices on a baking sheet lined with parchment paper. Bake for 20 minutes, flipping halfway through.
Spoon a dollop of pizza sauce onto each roasted slice, then sprinkle with shredded mozzarella.
Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Let cool for a few minutes, garnish if desired, and serve warm.
