Ingredients

  • 1 large eggplant cut into 1/4 inch slices
  • 1 tablespoon salt (to draw out moisture)
  • 3 cloves garlic minced or crushed
  • 1 tablespoon olive oil (for drizzling and flavor)
  • 1 teaspoon Italian seasoning (for that pizza flavor)
  • 1 cup pizza sauce (your favorite brand or homemade)
  • 1 cup mozzarella shredded (for that gooey cheese goodness)

Instructions

  • Preheat your oven to 400°F (200°C). Slice the eggplant into 1/4 inch thick rounds.
  • Sprinkle salt generously over both sides of the eggplant slices. Let sit for about 15-20 minutes, then rinse and pat dry.
  • In a mixing bowl, combine the minced garlic, olive oil, and Italian seasoning. Brush this mixture onto both sides of each eggplant slice.
  • Place the seasoned eggplant slices on a baking sheet lined with parchment paper. Bake for 20 minutes, flipping halfway through.
  • Spoon a dollop of pizza sauce onto each roasted slice, then sprinkle with shredded mozzarella.
  • Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes, garnish if desired, and serve warm.
