Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup red onion minced
  • 2 cloves garlic minced
  • 2 cups cooked brown rice
  • 2 roma tomatoes diced small
  • 2 cups fresh baby spinach
  • 1/2 cup fat-free feta cheese crumbled

Instructions

  • Gather all your ingredients. Mince the red onion and garlic, dice the roma tomatoes, and crumble the feta cheese.
  • In a large skillet, heat the olive oil over medium heat for about a minute.
  • Add the minced red onion and sauté for about 3 minutes until translucent. Then, add the minced garlic and cook for an additional minute.
  • Stir in the cooked brown rice, breaking up any clumps. Keep stirring for about 2-3 minutes until heated through.
  • Add the diced roma tomatoes and fresh baby spinach. Cook for another 3-4 minutes until the spinach is wilted and tomatoes are softened.
  • Sprinkle the crumbled feta cheese over the top and gently fold it in. Season with salt and pepper to taste.
  • Remove from heat and serve warm, garnished with extra feta if desired.
