Ingredients

  • 1 pound ground lamb
  • 1 tablespoon olive oil
  • 1/4 cup finely diced onion
  • 4 cloves garlic finely minced
  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon ground ginger

  • 1/4 cup fresh mint chopped plus more for garnish
  • 1/4 cup flat-leaf parsley chopped plus more for garnish
  • 1 cup turmeric rice or other rice of choice
  • 1 tomato diced
  • 1 cucumber peeled and diced
  • 1 cup hummus homemade or store-bought
  • 1 cup feta cheese
  • 2 pita bread optional for serving

Instructions

  • Start by cooking the turmeric rice according to package instructions or your usual method.
  • In a large skillet, heat the olive oil over medium heat. Add the finely diced onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.
  • Add the ground lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  • Stir in the paprika, allspice, red pepper flakes, ground ginger, salt, and pepper. Mix well to ensure the lamb is evenly coated with the spices. Cook for another 2-3 minutes to allow the flavors to meld.
  • Once the lamb is cooked, remove the skillet from heat and fold in the chopped mint and parsley.
  • In serving bowls, layer the turmeric rice, followed by the spiced ground lamb. Top with diced tomato, cucumber, and a generous dollop of hummus. Sprinkle feta cheese over the top and add more fresh herbs for garnish.
  • If desired, warm the pita bread in the oven or on a skillet. Serve alongside the bowls for a complete Mediterranean experience.

Notes

  • For a little extra kick, consider adding more red pepper flakes to the lamb.
