Ingredients

Instructions

  • In a large mixing bowl, use your mixer to combine the softened cream cheese and butter. Beat them together on medium speed until the mixture is smooth and well combined, about 2-3 minutes.
  • Gradually add in the powdered sugar, mixing on low speed to avoid a sugar cloud. Once incorporated, add the mint extract. Continue mixing until everything is well combined and smooth.
  • Add a few drops of green gel food coloring to your mixture. Start with a small amount and mix until you achieve your desired minty green color. Remember that a little goes a long way!
  • Gently fold in 1 cup of mini chocolate chips with a spatula, ensuring they are evenly distributed throughout the mixture.
  • Once everything is mixed well, use your hands to form the mixture into a ball shape. You can make it as large or small as you like, but a standard size is about 6-8 inches in diameter.
  • Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 2 hours, or until firm. This allows the flavors to meld and makes it easier to roll in chocolate chips.
  • After chilling, unwrap the cheese ball and roll it in the remaining 1 cup of mini chocolate chips, pressing gently to adhere them to the surface.
