Ingredients

  • 1 cup creamy natural peanut butter (Costco brand recommended)
  • 1/3 cup honey (or maple syrup for a vegan option)
  • 1 teaspoon pure vanilla extract
  • 2 cups old-fashioned oats
  • 1/4 cup vanilla protein powder *Plant-based powder can be used
  • 1/2 teaspoon flaky sea salt
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • 2 to 3 tablespoons M&Ms (optional)
  • Flaky sea salt (for sprinkling on top)

Instructions

  • Line a 9x9-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Set it aside.
  • In a microwave-safe bowl, combine the coconut oil and chocolate chips. Microwave in 30-second increments, stirring in between, until melted and smooth. Set aside to cool slightly.
  • In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Stir until well combined and smooth.
  • Add the old-fashioned oats, vanilla protein powder, and flaky sea salt to the mixing bowl. Mix everything together until fully combined.
  • Pour the melted chocolate mixture into the bowl with the oat mixture. Add the semi-sweet chocolate chips and M&Ms (if using). Stir until the chocolate is evenly distributed throughout the mixture.
  • Transfer the mixture to the prepared baking pan. Use a spatula or your hands to press the mixture down firmly and evenly into the pan.
  • Sprinkle a little flaky sea salt on top for an extra flavor boost.
  • Place the baking pan in the refrigerator for at least 1-2 hours to allow the bars to set. Once firm, lift the bars out of the pan using the parchment paper overhang.
  • Cut the bars into squares or rectangles, and enjoy your homemade No Bake Monster Cookie Bars!
