Line a 9x9-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Set it aside.
In a microwave-safe bowl, combine the coconut oil and chocolate chips. Microwave in 30-second increments, stirring in between, until melted and smooth. Set aside to cool slightly.
In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Stir until well combined and smooth.
Add the old-fashioned oats, vanilla protein powder, and flaky sea salt to the mixing bowl. Mix everything together until fully combined.
Pour the melted chocolate mixture into the bowl with the oat mixture. Add the semi-sweet chocolate chips and M&Ms (if using). Stir until the chocolate is evenly distributed throughout the mixture.
Transfer the mixture to the prepared baking pan. Use a spatula or your hands to press the mixture down firmly and evenly into the pan.
Sprinkle a little flaky sea salt on top for an extra flavor boost.
Place the baking pan in the refrigerator for at least 1-2 hours to allow the bars to set. Once firm, lift the bars out of the pan using the parchment paper overhang.
