  • 4 ounces whole-wheat spaghetti or long pasta

Instructions

  • In your large pot, heat the extra virgin olive oil over medium heat. Add the finely chopped garlic and sauté for about 1-2 minutes until fragrant. Be careful not to let the garlic brown, as this can lead to a bitter taste.
  • Pour in the low-sodium chicken broth and low-fat milk. Stir to combine, and bring the mixture to a gentle simmer.
  • Once the liquid is simmering, add the whole-wheat spaghetti or your choice of long pasta. Stir to ensure the pasta is submerged in the liquid.
  • Cook the pasta according to the package instructions, usually around 8-10 minutes, stirring occasionally. If you opted for cornstarch, mix it with a little water to create a slurry and add it to the pot during the last couple of minutes of cooking. This will help thicken the sauce slightly.
  • Once the pasta is cooked, remove the pot from the heat. Stir in the grated Parmesan cheese, mixing until melted and creamy. Season with salt and pepper to taste.
