Ingredients

For the Pasta:

  • 14 oz Italian chicken sausage casing removed
  • 12 oz uncooked orecchiette pasta or gluten-free pasta
  • 6 1/2 cups fresh broccoli florets no stems (about 16 oz)
  • 5 cloves garlic smashed and chopped
  • 1/4 cup grated Pecorino Romano or Parmesan cheese
  • 2 tbsp olive oil divided
  • Kosher salt to taste

Instructions

Cooking Instructions:

  • Step 1: Cook the Orecchiette - Bring a large pot of salted water to a boil. Add the orecchiette and cook until al dente, about 9-11 minutes.
  • Step 2: Prepare the Broccoli - Cut large florets into smaller pieces. Set aside.
  • Step 3: Cook the Chicken Sausage - Heat 1 tablespoon of olive oil in a skillet. Add sausage and cook until browned, about 5-7 minutes.
  • Step 4: Sauté the Garlic - Add chopped garlic to the skillet and sauté for 1-2 minutes until fragrant.
  • Step 5: Add the Broccoli - Stir in broccoli, salt, and pepper. Cook for about 3-4 minutes until tender.
  • Step 6: Combine Pasta and Sauce - Drain pasta, reserving 1/2 cup of water. Add pasta to skillet along with reserved water.
  • Step 7: Add Cheese and Final Touches - Sprinkle cheese over pasta and toss. Adjust seasoning as needed.
  • Step 8: Serve and Enjoy - Drizzle with remaining olive oil and serve hot.
