  • 10 oz cream cheese at room temperature
  • 1/4 cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed Oreos

Preparation Steps:

  • Step 1: Line your 9x9-inch baking pan with parchment paper, leaving some overhang.
  • Step 2: In a mixing bowl, combine 1 1/2 cups crushed Oreo cookies, 5 tablespoons melted unsalted butter, 1/3 cup packed brown sugar, 3 tablespoons granulated sugar, 1/4 teaspoon salt, and 1 teaspoon vanilla extract. Stir until well combined.
  • Step 3: Gently fold in 3/4 cup all-purpose flour and 3/4 cup mini chocolate chips until just combined.
  • Step 4: Press the cookie dough mixture evenly into the bottom of the prepared pan. Refrigerate while preparing the cheesecake layer.
  • Step 5: In a separate mixing bowl, beat together 10 oz cream cheese and 1/4 cup granulated sugar until smooth. Add in 1 large egg and 1 teaspoon vanilla extract, mixing until well incorporated.
  • Step 6: Gently fold in 1/4 cup crushed Oreos into the cheesecake mixture.
  • Step 7: Pour the cheesecake layer over the cookie dough layer, spreading evenly.
  • Step 8: Preheat your oven to 350°F (175°C) and bake for about 25-30 minutes, until the edges are set and the center is slightly jiggly. Cool in the pan for at least 30 minutes.
