Ingredients

  • 2.25 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 2 large egg whites
  • 2 large egg yolks
  • 2 cups whole milk
  • 3 tablespoons vegetable oil
  • 2 teaspoons pure vanilla extract

Instructions

  • Step 1: Preheat the waffle iron according to the manufacturer’s instructions for crispy waffles.
  • Step 2: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  • Step 3: In another bowl, beat the egg whites until soft peaks form. Whisk together the egg yolks, milk, oil, and vanilla extract until combined.
  • Step 4: Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the beaten egg whites for fluffiness.
  • Step 5: Lightly grease the preheated waffle iron and pour the recommended amount of batter. Cook for about 4-5 minutes, or until golden brown.
