  • 3 cloves garlic minced
  • 1 each lemon juice and zest
  • 1 each orange juice only
  • ½ cup olive oil
  • 2 teaspoons sweet paprika
  • ½ teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2.2 lbs chicken pieces skin on
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh parsley for garnish

  • In a mixing bowl, combine the minced garlic, lemon juice and zest, orange juice, olive oil, sweet paprika, black pepper, red pepper flakes, dried oregano, and salt. Whisk until everything is well blended and aromatic.
  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
  • Preheat your oven to 400°F (200°C). This high temperature will ensure that your chicken cooks evenly and develops a beautiful, crispy skin.
  • Remove the chicken from the marinade and place it skin-side up on a baking tray. Reserve the leftover marinade for basting later.
  • Bake the chicken in the preheated oven for about 35-40 minutes. Halfway through, baste the chicken with the reserved marinade to enhance the flavor and moisture.
  • Use a meat thermometer to check that the internal temperature of the chicken reaches 165°F (75°C). If it needs more time, continue baking, checking every few minutes.
  • Once fully cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.
