Ingredients

  • 1 pound ground beef
  • 1 12-ounce bag tortilla chips
  • 1 packet homemade taco seasoning (or store-bought)
  • 15 ounces refried beans
  • 1/2 cup corn (frozen or fresh)
  • 1/2 cup sliced olives
  • 1/2 cup black beans (canned, rinsed and drained)
  • 1/2 cup salsa
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded jack cheese
  • Cilantro (chopped, for garnish)
  • Sour cream (for serving)
  • Jalapeños (fresh or pickled, for serving)
  • Roma tomatoes (chopped, for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). This is the ideal temperature for getting those nachos crispy and melty.
  • In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Once fully cooked, drain any excess fat. Add your homemade taco seasoning (or store-bought) to the beef, along with a splash of water if needed. Stir until well combined and let it simmer for a few minutes.
  • On a large sheet pan, spread an even layer of tortilla chips. This is the base for your nachos, so make sure every chip gets some delicious toppings!
  • Spread the refried beans over the tortilla chips, followed by the seasoned ground beef. Next, sprinkle the corn, sliced olives, black beans, and salsa evenly across the nachos.
  • Generously sprinkle both the mild cheddar and jack cheese over the top, ensuring that every inch is covered with cheesy goodness.
  • Place the sheet pan in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning!
  • Once out of the oven, let them cool for a minute. Top with chopped cilantro, diced roma tomatoes, and any additional toppings you desire, such as jalapeños.
