Ingredients

  • 1 cup granulated sugar
  • 1 cup light corn syrup or honey
  • 1 cup creamy peanut butter
  • 1 teaspoon kosher salt
  • 2 cups corn flakes
  • 4 ounces chocolate for drizzling or coating

Instructions

  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine 1 cup of granulated sugar and 1 cup of light corn syrup or honey. Stir until well mixed.
  • Add 1 cup of creamy peanut butter and 1 teaspoon of kosher salt to the bowl. Mix until fully combined and smooth.
  • Gently fold in 2 cups of corn flakes, ensuring every flake is coated.
  • Scoop out portions and shape them into cookies on the prepared baking sheet.
  • Refrigerate the cookies for about 30 minutes or until firm.
  • Optional: Melt 4 ounces of chocolate in a microwave-safe bowl and drizzle over the cookies once set.
