Ingredients

For the Oreo Crust

  • 1.5 cups Oreo cookie crumbs finely crushed
  • 0.25 cup unsalted butter melted

For the Peanut Butter Cheesecake Filling

  • 2 cups cream cheese softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

For the Toppings

  • 0.5 cup chocolate chips semi-sweet or milk
  • 0.5 cup Oreos crushed for garnish

Instructions

Prepare the Oreo Crust

  • Crush 1 1/2 cups of Oreo cookie crumbs until fine using a food processor or rolling pin.
  • Combine the Oreo crumbs with 1/4 cup melted unsalted butter until the mixture resembles wet sand.
  • Press the mixture firmly into the bottom of an 8x8-inch baking pan to form an even layer.
  • Refrigerate the crust while preparing the filling to help it set.

Make the Peanut Butter Cheesecake Filling

  • Beat 2 cups softened cream cheese and 1 cup creamy peanut butter together until smooth and creamy using an electric mixer.
  • Add 1 cup powdered sugar and 1 teaspoon vanilla extract, beating until fully combined.
  • Gently fold in 1 cup whipped topping carefully to maintain airiness.

Assemble and Add Toppings

  • Pour the peanut butter cheesecake filling over the chilled Oreo crust and spread evenly with a spatula.
  • Sprinkle 1/2 cup chocolate chips evenly on top, then add 1/2 cup crushed Oreos for garnish.

Chill and Serve

  • Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight for best results.
  • Once set, cut into bars and serve chilled.

Equipment

  • 8x8-inch baking pan
  • Mixing Bowls
  • Electric Mixer or Stand Mixer
  • Measuring cups and spoons
  • Spatula
  • Food processor or rolling pin
  • Cooling Rack

Notes

  • Softening cream cheese at room temperature for 30 minutes prevents lumps and ensures a silky filling.
  • Use an electric mixer to beat cream cheese and peanut butter thoroughly for a smooth texture.
  • Fold whipped topping gently to keep the filling light and airy; avoid overmixing.
  • Chill bars sufficiently to achieve clean slices and the best texture.
  • For extra indulgence, drizzle warmed peanut butter or chocolate sauce over bars before serving.
