Preheat your oven to 350°F (175°C).
Line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides.
In a medium bowl, whisk together the all-purpose flour, white whole wheat flour, baking soda, and kosher salt. Set aside.
In a large mixing bowl, use an electric mixer to cream the unsalted butter and dark brown sugar until light and fluffy, about 2-3 minutes.
Beat in the eggs, one at a time, then mix in the vanilla bean paste.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Gently fold in the mini dark chocolate chips.
Spread half of the cookie batter in the bottom of the prepared baking pan, layer the peanut butter DelightFulls, then spread the remaining batter on top.
Bake for 25-30 minutes, or until the edges are golden brown and a toothpick comes out with a few moist crumbs.
Let cool for 10-15 minutes, then lift the bars out using the parchment paper and cool completely before slicing.
