Ingredients

  • 1-1/4 cups all-purpose flour
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter room temperature
  • 1-1/2 cups dark brown sugar
  • 1 teaspoon vanilla bean paste
  • 2 large eggs
  • 1 package peanut butter Nestle DelightFulls
  • 1 cup mini dark chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C).
  • Line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides.
  • In a medium bowl, whisk together the all-purpose flour, white whole wheat flour, baking soda, and kosher salt. Set aside.
  • In a large mixing bowl, use an electric mixer to cream the unsalted butter and dark brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the eggs, one at a time, then mix in the vanilla bean paste.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the mini dark chocolate chips.
  • Spread half of the cookie batter in the bottom of the prepared baking pan, layer the peanut butter DelightFulls, then spread the remaining batter on top.
  • Bake for 25-30 minutes, or until the edges are golden brown and a toothpick comes out with a few moist crumbs.
  • Let cool for 10-15 minutes, then lift the bars out using the parchment paper and cool completely before slicing.
