Ingredients

  • 4 cups fresh broccoli florets chopped into bite-sized pieces
  • 3-4 fresh carrots peeled and sliced
  • 1/2 bulb garlic cloves separated and peeled
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and prepare your broccoli and carrots. Chop the broccoli into bite-sized florets and slice the carrots into thin rounds.
  • In a mixing bowl, combine the chopped broccoli and sliced carrots. Add the peeled garlic cloves, olive oil, salt, and black pepper. Toss everything together until the vegetables are evenly coated.
  • Line your baking sheet with parchment paper (optional). Spread the vegetable mixture in a single layer on the sheet.
  • Place the baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through.
  • Once roasted to perfection, remove the baking sheet from the oven and let the vegetables cool for a minute before serving.
