Ingredients

  • 1 small head garlic
  • 1 teaspoon olive oil for roasting garlic
  • 8 ounces feta cheese at room temperature
  • 8 ounces cream cheese at room temperature
  • 2 tablespoons olive oil for mixture
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh parsley chopped

Instructions

  • Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with 1 teaspoon of olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden brown.
  • In a food processor, combine the feta cheese and cream cheese, allowing them to come to room temperature.
  • Once the garlic is roasted and cooled, squeeze the cloves into the food processor, then add the remaining ingredients: olive oil, lemon juice, thyme, and parsley.
  • Blend the mixture until smooth and creamy, scraping down the sides as needed.
  • Transfer to a serving bowl, drizzle with olive oil, and garnish with thyme or parsley. Serve warm or at room temperature with dippers.
