Ingredients

  • 1 pound turkey sausage crumbled
  • 4 large eggs
  • 1 cup cream cheese softened
  • 30 ounces frozen hash browns thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt to taste
  • pepper to taste
  • 2 tablespoons chopped green onions optional

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease your casserole dish with cooking spray or butter to prevent sticking.
  • In a large skillet over medium heat, cook the crumbled turkey sausage until browned and cooked through, about 6-8 minutes. Break up any large pieces with your spatula as it cooks. Once done, drain excess fat if necessary and set the sausage aside.
  • In a large mixing bowl, whisk together the 4 eggs and softened cream cheese until smooth and creamy. It’s okay if small lumps remain; they will melt during baking.
  • To the egg and cream cheese mixture, add the thawed hash browns, cooked sausage, shredded cheddar cheese, milk, garlic powder, onion powder, salt, and pepper. Stir everything gently until well combined.
  • Pour the mixture into your prepared casserole dish and spread it out evenly. Bake in the preheated oven for 45-55 minutes, or until the top is golden brown and the casserole is set in the center.
  • Remove from the oven and let it cool for a few minutes before slicing. Sprinkle with chopped green onions for a fresh pop of color and flavor, if desired. Serve warm and enjoy!
