Ingredients

  • 14 oz turkey breakfast sausage links sliced or crumbled
  • 16 oz sliced mushrooms button, cremini, or shiitake
  • 2 tsp olive oil for sautéing
  • 3/4 cup crumbled feta cheese for creaminess
  • 8 large eggs the star of the show
  • 2 T cream for richness
  • 1 tsp Spike Seasoning or any seasoning blend
  • to taste fresh-ground black pepper
  • optional sliced green onions for garnish

Instructions

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • In a large skillet, heat 2 teaspoons of olive oil over medium heat. Add the turkey breakfast sausage links, and cook until browned and cooked through, about 5-7 minutes.
  • Add the sliced mushrooms to the skillet and cook for an additional 5-7 minutes until tender.
  • In a mixing bowl, beat together the eggs, cream, and Spike seasoning until well combined.
  • Stir in crumbled feta cheese with the sausage and mushrooms. Pour the egg mixture over and gently mix.
  • Transfer the mixture to a baking dish and bake for 25-30 minutes until the eggs are set and golden.
  • Let cool for a few minutes, garnish with sliced green onions, cut into squares, and serve warm.

Notes
