Ingredients

  • 1 cup fat-free milk
  • 6 wedges Laughing Cow Light Swiss Cheese cut into small pieces
  • 2 cloves garlic minced
  • 1/4 of a yellow onion chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon Smart Balance Butter or light heart-healthy butter spread
  • 1 teaspoon cornstarch
  • 1 tablespoon freeze-dried chives or fresh chives, finely chopped

Instructions

  • Begin by heating your medium saucepan over medium heat. Add the tablespoon of Smart Balance Butter. Once melted, toss in the chopped yellow onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.
  • Pour in 1 cup of fat-free milk and stir well to combine with the sautéed onions and garlic. Allow this mixture to come to a gentle simmer, stirring occasionally.
  • Once the milk is simmering, add the 6 wedges of Laughing Cow Light Swiss Cheese. Stir continuously until all the cheese is fully melted and the mixture is smooth and creamy.
  • To thicken your sauce, mix 1 teaspoon of cornstarch with a tablespoon of cold water in a small bowl to create a slurry. Gradually whisk this slurry into your simmering sauce. Continue to stir as the sauce thickens, about 2-3 minutes.
  • Add the garlic powder, onion powder, ground black pepper, and salt. Stir well to ensure all the spices are evenly distributed throughout the sauce.
  • Lastly, stir in your freeze-dried chives (or fresh chives if you prefer). Give one final stir, and your sauce is ready to serve!
