Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
Wash and peel the sweet potatoes, then slice them thinly.
In a large bowl, drizzle sweet potato slices with olive oil, sprinkle with salt, and toss until coated.
Spread sweet potato slices in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway through.
Cut the avocados in half, remove pits, and scoop flesh into a mixing bowl. Add onion, red pepper, chilli, and coriander.
Squeeze juice of two limes into the avocado mixture, season with salt, and mash together until combined.
Adjust seasonings if needed and drizzle olive oil over the top.
Serve sweet potato chips alongside smashed avocados and enjoy!
