Ingredients

For the Chips:

  • 2 pieces Sweet potatoes peeled and thinly sliced
  • 100 milliliters Olive oil for drizzling
  • Salt to taste
  • Cayenne pepper optional

For the Avocado Mixture:

  • 3 pieces Avocados preferably Haas
  • 1 small Red onion chopped
  • 1 piece Red chilli finely chopped
  • 1 handful Coriander leaves chopped
  • 1 piece Red pepper diced
  • 3 pieces Limes juiced

Instructions

Preparation Steps:

  • Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit).
  • Wash and peel the sweet potatoes, then slice them thinly.
  • In a large bowl, drizzle sweet potato slices with olive oil, sprinkle with salt, and toss until coated.
  • Spread sweet potato slices in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway through.
  • Cut the avocados in half, remove pits, and scoop flesh into a mixing bowl. Add onion, red pepper, chilli, and coriander.
  • Squeeze juice of two limes into the avocado mixture, season with salt, and mash together until combined.
  • Adjust seasonings if needed and drizzle olive oil over the top.
  • Serve sweet potato chips alongside smashed avocados and enjoy!
