Ingredients

For the Bars:

  • 2 cups Rice Krispies cereal
  • 2 cups mini marshmallows
  • 4 tablespoons butter divided
  • 1 cup semi-sweet chocolate chips
  • 1-2 cups mini marshmallows for topping

  • Step 1: Melt the Butter - In a medium saucepan over low heat, melt 2 tablespoons of butter. Once melted, add in 2 cups of mini marshmallows and stir continuously until they are completely melted and smooth.
  • Step 2: Combine Ingredients - Remove the saucepan from heat, and immediately add the Rice Krispies cereal to the melted marshmallow mixture. Stir gently until all the cereal is thoroughly coated.
  • Step 3: Add Chocolate Chips - Fold in 1 cup of semi-sweet chocolate chips while the mixture is still warm. This will allow the chocolate to melt slightly, creating a deliciously gooey texture.
  • Step 4: Prepare the Baking Dish - In your 9x13 inch baking dish, melt the remaining 2 tablespoons of butter and use a spatula or paper towel to coat the bottom and sides. This will prevent the bars from sticking.
  • Step 5: Press the Mixture - Transfer the Rice Krispies mixture into the prepared baking dish. Using a spatula, press it firmly and evenly into the dish. Be careful not to press too hard, or you may end up with a dense bar!
  • Step 6: Add More Marshmallows - Sprinkle the remaining 1-2 cups of mini marshmallows on top of the pressed mixture. You can gently press them into the bars for a more even distribution.
  • Step 7: Cool and Set - Allow the S'Mores Krispies Bars to cool at room temperature for at least 30 minutes. For quicker setting, you can place them in the refrigerator for about 15 minutes.
  • Step 8: Slice and Serve - Once set, lift the bars out of the dish using the edges of the parchment paper or by running a knife around the edges. Cut into squares and serve!
