  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2-3 tablespoons mayonnaise (optional) for extra creaminess

Instructions

  • Start by gathering all your ingredients. Make sure the cream cheese is softened, so it blends easily. Shred the sharp and mild cheddar cheeses if you haven’t purchased pre-shredded cheese.
  • In a large mixing bowl, combine the softened cream cheese with the sharp and mild cheddar cheeses. Using a hand mixer or stand mixer, blend the cheeses together until they are well combined and creamy.
  • Fold in the diced pimentos with a spatula, ensuring they are evenly distributed throughout the cheese mixture.
  • Sprinkle in the kosher salt and ground black pepper. Mix again until the seasonings are fully incorporated. Taste the mixture and adjust the seasoning as needed.
  • If you like your pimento cheese extra creamy, you can add 2-3 tablespoons of mayonnaise. This is entirely optional.
  • Transfer the pimento cheese to a storage container and let it chill in the refrigerator for at least an hour.
