Start by rolling out your pizza crust into a large square on a floured surface, about ½ inch thick.
Preheat your oven to 475°F (245°C), placing the pizza stone in the oven while preheating.
Drizzle the rolled-out dough with 1 tablespoon of olive oil, spreading it evenly across the surface.
Spread the pizza sauce evenly over the dough, leaving a small border for the crust.
Sprinkle the shredded fresh mozzarella generously over the sauce.
Sprinkle the Italian seasoning over the cheese, and distribute the sliced garlic evenly on top.
Arrange the sliced spicy sausage over the cheese and garlic, distributing it evenly.
Sprinkle the chopped sun-dried tomatoes over the pizza.
Carefully transfer the pizza to your preheated pizza stone or baking sheet. Bake for 12-15 minutes.
Once out of the oven, top the hot pizza with a handful of fresh arugula.
Let the pizza cool for a couple of minutes, then slice into squares and serve hot.
