Ingredients

  • 6 cups fresh spinach leaves (200g)
  • 3 large eggs beaten
  • ¾ cup grated cheddar (75g)
  • ¼ cup grated parmesan (25g)
  • 1 cup almond flour
  • 2 tablespoons whole psyllium husk or 1 tablespoon psyllium husk powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley chopped (15g)
  • 1 tablespoon olive oil

Instructions

  • Preheat your oven to 375°F (190°C) to ensure even cooking.
  • In a large pot, bring a little water to a boil. Add the fresh spinach leaves and blanch for about 2-3 minutes until wilted. Drain and squeeze out excess moisture, then chop finely.
  • In a large mixing bowl, combine the chopped spinach, beaten eggs, grated cheddar, grated parmesan, almond flour, psyllium husk, garlic powder, onion powder, black pepper, and chopped parsley. Stir until well combined.
  • Take small amounts of the mixture and roll into balls, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
  • Drizzle olive oil over the formed spinach balls to promote crispiness while baking.
  • Bake for 20-25 minutes, or until golden brown and firm to the touch.
  • Remove from the oven and let cool for a few minutes before serving warm.
