In a large pot, bring a little water to a boil. Add the fresh spinach leaves and blanch for about 2-3 minutes until wilted. Drain and squeeze out excess moisture, then chop finely.
In a large mixing bowl, combine the chopped spinach, beaten eggs, grated cheddar, grated parmesan, almond flour, psyllium husk, garlic powder, onion powder, black pepper, and chopped parsley. Stir until well combined.
Take small amounts of the mixture and roll into balls, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
Drizzle olive oil over the formed spinach balls to promote crispiness while baking.
Bake for 20-25 minutes, or until golden brown and firm to the touch.
Remove from the oven and let cool for a few minutes before serving warm.
