Ingredients

  • 3 medium potatoes peeled and sliced
  • 2 tablespoons olive oil
  • 1 medium red pepper chopped into pieces
  • 1 medium green pepper chopped into pieces
  • 1 medium red onion chopped into pieces
  • 1 cup sliced kielbasa
  • 1 cup shredded mozzarella cheese
  • Salt to taste
  • Pepper to taste
  • Chopped scallions for garnish

Instructions

  • Start by peeling and slicing the medium potatoes into thin rounds. This will help them cook evenly and achieve that perfect golden crisp.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. You want the oil to shimmer but not smoke, which indicates it's ready for the potatoes.
  • Add the sliced potatoes to the skillet. Sprinkle with salt and pepper to taste. Cook for about 10-12 minutes, stirring occasionally until they are golden brown and tender. If they start to stick, add a little more olive oil.
  • Once the potatoes are cooked, add the chopped red pepper, green pepper, and red onion to the skillet. Sauté for another 5-7 minutes until the vegetables are softened and fragrant.
  • Now it’s time to add the sliced kielbasa to the skillet. Cook for an additional 5 minutes, allowing the kielbasa to heat through and get a bit crispy.
  • With the skillet mixture ready, create two small wells in the mixture. Crack an egg into each well and cover the skillet with a lid. Cook for about 5 minutes or until the eggs are cooked to your desired doneness.
  • Once the eggs are cooked, sprinkle the shredded mozzarella cheese over the entire skillet. Cover again for another 1-2 minutes until the cheese is melted and bubbly.
