Ingredients

  • 2 tablespoons olive oil
  • 2 tins chopped tomatoes (800g / 28 oz total)
  • ½ cup tomato puree (50g)
  • 1 cup chopped basil leaves (15g) or 1 tablespoon dried basil plus 1 tablespoon dried oregano
  • 1 teaspoon dried oregano
  • 2 garlic cloves (minced) or 1 teaspoon garlic powder
  • 1 small onion (finely chopped) (50g) or 1 teaspoon onion powder
  • 2 teaspoons salt or to taste
  • Black pepper to taste

Instructions

  • Begin by heating the olive oil in your large saucepan over medium heat. Once the oil is hot, add the finely chopped onion. Sauté for about 3-5 minutes until the onion becomes translucent. Then, add the minced garlic and continue to sauté for another minute until fragrant.
  • Next, pour in the two tins of chopped tomatoes and the tomato puree. Stir well to combine all the ingredients.
  • Now, it’s time to add the herbs. Stir in the chopped basil, dried oregano, salt, and pepper. Bring the mixture to a gentle simmer, reducing the heat to low. Allow the sauce to simmer for about 20-30 minutes.
  • If you prefer a smoother sauce, use an immersion blender to puree the sauce to your desired consistency.
  • Before serving, taste your sauce and adjust the seasoning if needed. You can add more salt, pepper, or herbs to suit your palate.
