Ingredients

  • 1 tablespoon olive oil for sautéing
  • 12 ounces chicken sausage cut into rounds
  • 1/2 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup uncooked orzo pasta
  • 1/4 teaspoon Italian seasoning
  • 2 cups chicken broth
  • 1 14 fluid ounce can tomato sauce
  • 2 cups broccoli cut into small florets
  • 1/2 red bell pepper chopped
  • to taste salt & pepper
  • to taste freshly grated parmesan cheese optional for serving

Instructions

  • Start by heating the olive oil in a large pot over medium heat. Once hot, add the chicken sausage rounds. Sauté for about 5-7 minutes, or until they are browned and cooked through.
  • Add the chopped onion and minced garlic to the pot. Sauté for an additional 2-3 minutes, until the onion is translucent and the garlic is fragrant.
  • Stir in the uncooked orzo pasta and Italian seasoning. Mix everything well to coat the orzo with the flavors from the sausage and aromatics.
  • Pour in the chicken broth and tomato sauce. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 10-12 minutes, or until the orzo is tender.
  • Once the orzo is cooked, stir in the broccoli florets and chopped red bell pepper. Cook for an additional 3-5 minutes, allowing the vegetables to soften but still retain their color.
  • Taste your dish and season with salt and pepper as needed.
  • Ladle the Tomato Orzo with Chicken Sausage and Broccoli into bowls. Top with freshly grated parmesan cheese if desired.
