  • Begin by washing the russet potatoes thoroughly. Once clean, cut them into 1/4-inch sticks. Try to keep the size uniform to ensure they cook evenly.
  • To remove excess starch, soak the cut potatoes in cold water for at least 30 minutes. This step helps achieve that extra crispy texture.
  • Preheat your oven to 425°F (220°C). A hot oven is crucial for achieving that perfect crispiness.
  • After soaking, drain the potatoes and pat them dry with a clean kitchen towel. This is important; moisture will hinder the crisping process.
  • In a large mixing bowl, combine the dried potato sticks with olive oil, sea salt, and freshly cracked pepper. Toss until the fries are evenly coated.
  • Spread the fries in a single layer on a large baking sheet. Make sure they are not overcrowded; this will help them cook evenly and become crisp.
  • Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until the fries are golden and crispy.
  • Once the fries are cooked, remove them from the oven and immediately drizzle the truffle oil over the hot fries. Sprinkle the grated Parmesan and chopped parsley on top while the fries are still hot.
