  • 4 slices corned beef
  • 2 slices Swiss cheese divided use
  • 1 teaspoon butter optional
  • 1 each egg
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon honey mustard
  • 1 each English muffin toasted

Cooking Instructions

  • Gather all your ingredients and have them ready to go for a smoother cooking process.
  • Toast your English muffin to your desired level of crispiness using a toaster or skillet.
  • In a skillet over medium heat, add optional butter. Once melted, crack the egg into the skillet. Sprinkle salt and pepper on top. Cook until the whites are set but the yolk is still runny, about 3 to 4 minutes.
  • In the same skillet, add the corn beef slices. Heat until warmed through, about 2 minutes on each side. Optionally, add Swiss cheese on top of the corned beef in the last minute to melt.
  • Spread honey mustard on one half of the toasted English muffin. Layer with corned beef and melted Swiss cheese. Carefully place the cooked egg on top, and close with the other half of the muffin.
  • Cut your sandwich in half if desired, and serve warm. Enjoy with your favorite breakfast beverage!
