Instructions

Cooking Instructions:

  • Start by cooking the chicken breasts in a large skillet over medium heat. If using raw chicken, season with salt and pepper. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Once cooked, remove from the skillet and let it cool before shredding or chopping it into bite-sized pieces.
  • In a mixing bowl, combine the mayonnaise, crème fraîche (or Greek yogurt), heavy cream, apricot jam, curry powder, finely chopped dried apricots, and tomato paste. Whisk until smooth and creamy. Taste and adjust seasoning as needed.
  • Add the cooled chicken pieces to the creamy curry sauce. Mix well until the chicken is evenly coated.
  • Fold in the toasted sliced almonds and chopped fresh cilantro for added texture and flavor.
  • For the best flavor, cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld beautifully. Serve it on a bed of greens, in sandwich wraps, or simply enjoy it on its own.
