Ingredients

For the Creamy Filling:

  • 1/2 cup cream cheese
  • 1/2 cup shredded Double Gloucester or Cheddar cheese
  • 2 tbsp heavy whipping cream
  • 1/4 tsp coarse salt
  • 1 tbsp mayonnaise
  • 1 1/2 tsp minced garlic
  • 1/2 tsp coarse salt

For the Sandwich:

  • 8 slices artisan bread
  • 4 slices cheddar cheese
  • 4 slices provolone cheese

Instructions

Directions:

  • In a mixing bowl, combine the cream cheese, shredded Double Gloucester or Cheddar cheese, heavy whipping cream, 1/4 teaspoon coarse salt, mayonnaise, and minced garlic. Mix until well combined and creamy.
  • Take four slices of artisan bread and spread a generous amount of the creamy filling on one side of each slice. On top of the filling, layer two slices of cheese (one cheddar and one provolone) on each of the four slices. Top with the remaining four slices of bread, making sure the filling side is facing the cheese.
  • Place your non-stick skillet over medium heat and let it warm up.
  • Place the assembled sandwiches in the skillet. Cook for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip the sandwiches using your spatula and cook for another 3-4 minutes until the other side is equally golden and the cheese is melted.
  • Once both sides are perfectly toasted and the cheese is melty, remove the sandwiches from the skillet. Let them sit for a minute before slicing them in half. Serve warm and enjoy!

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the creamy filling.
  • Don’t overfill your sandwich, or it may fall apart while grilling.
